1. I think it's because it's one of the final two days of Passover week.

Like the eve and first two days of the holiday, those are the most 'solemn' and observed as a Sabbath.
Hope that from tomorrow on, the trial will continue at a full schedule... until Memorial Day.

4. Long trials will almost always have an occasional day off, for a lot of reasons.

Could be some previously-scheduled hearing, or someone is ill or unavailable. Trump will just play golf and rage-xeet in the meantime. AFAIC it's fine - the longer it drags out, the more time he can't spend campaigning and instead has to sit there in silence and listen to people describe what a scumbag he is.
