2 tsp orange zest (can used dried but fresh is better)
2/3 cup buttermilk
6 TBS melted, unsalted butter
1 large egg
2 cups baking flour
1 cup sugar
3/4 tsp salt
1 tsp baking powder
1/4 tsp baking soda
1 cup fresh cranberries & 1/2 cup pecans, slivered almonds or walnuts (or none)
Mix all wet ingredients in small bowl, including zest, and set aside. Mix all dry ingredients well. Make sure you get the salt, baking soda and baking powder evenly distributed in the flour. Add the wet ingredients to dry and mix well, but don't overmix. It is a quick bread, after all! Gently stir in cranberries and nuts. Bake at 375 for twenty minutes, then at 350 for one hour. Use a 9 x 5 loaf pan greased and floured, or an organic cooking spray made for baked goods. (easier)
Remove from pan after ten minutes, and let cool completely for an hour or so, if you can wait that long. I never can. Quick breads slice more prettily if they are completely cool.
A couple of side notes- this recipe is a pain in the rear compared to using a box mix, but it's so worth it! Don't use Craisins. Too sweet and you won't get that to-die-for authentic tart cranberry taste. Sometimes I add a tsp of almond flavoring which is really good. Add about a tsp more flour if you do that.
Also, recipe says to chop the cranberries, but I throw them in whole. I find it too messy and time-consuming to chop them. They burst while baking and it makes the bread taste so good. It doesn't look as pretty inside, but it doesn't affect the taste.
