but I made a ham & bean soup a couple of weeks ago and completely over-salted it.

My best soup comes from my roasted chicken.

White wine, olive oil, onions, garlic, celery, bell pepper, rosemary and a little lemon juice.

When I roast it I throw all those aromatics into the cavity. Get the skin nice and crisp.

And then I save whatever is leftover for soup and sandwiches.

I don't care much about the starch, but I need a green veg on the plate.

It takes less than 10 minutes to:

1. Warm an English muffin from the refrigerator in the toaster.
2. Fry the egg in a bit of oil.
3. Heat up some ham on the same skillet as the egg.
4. Toast the English muffin a second time to brown it a bit.
5. Lightly butter the toasted English muffin.
6. Arrange a few slices of sharp cheddar cheese on the English muffin, then put the hot ham on the cheese to melt it.
7. Surgically remove the yolk from the fried egg, because I don't like yolks.
8. Arrange the egg on the stack, put the top muffin half on.

Are you Barmy? Yolks are essential. Egg whites are like chicken white meat. Bland and tasteless.

Sorry. When I make a fried egg sandwich, I poke the yolk so it's not runny. Then place it on the sandwich when the white is cooked. By that time, the yolk will be firm enough to not run all over the place, always a good idea.

The yolk is the best part of the egg. Healthy, too.

Love corned beef hash. And runny yolk fried eggs are obligatory with it.

Now I wish I could have some this AM.

I'll opt for three rashers of thick bacon and toast w/ two basted eggs, whites fully cooked, yolks runny.

I've never figured out why that is my fav, but if I were on death row, that would be my request for a last meal...particularly, on bread and butter. However, it would have to be made to my directions which take quite a few hours...might delay that final hour.

One of those awful recipes that calls for a can of Campbell's soup.

Also hamburger meat, frozen peas & carrots, ketchup, onions and pepper covered with a layer of mashed potatoes.

Meat and veg are simmered in said gravy. Also, I line the dish with mashed potatoes, as well as putting them on top. And I sprinkle the whole thing with cheese, before I pop it into the oven.

We did have a lovely white Christmas and some uncharacteristically cold days after that, but now it's back to 40/50 degrees and rain (mostly).

I'd rather have your snow.

That was 45 years ago.

But I always liked it and chose to buy my lunch when it was on the menu.
I think our school made it with just ground beef, seasoning and mashed potatoes. I don't remember any vegetables.

The cornstarch extends the drippings from the hamburger and onions into gravy. I cheat with a little canned gravy, au jus, or beef broth. If I'm making a lot, I use half creamed corn and half whole kernel.

Vegan8 thyme gravy (it’s heavy on Cabernet Sauvignon) on nutritionless white bread ☺️ If I need comfort and all of husband’s white bread is gone I go with gravy on elbow macaroni.

Nothing fancy - sharp cheddar in a white sauce (milk, butter, a little flour) and macaroni, topped with buttered bread crumbs and baked.
Mashed potatoes - potatoes, milk, butter, salt.
Waffle iron toast - melt butter in waffle iron, add buttered white bread, cook until browned and crunchy. Utterly divine.

Served with non-high fructose corn syrup ketchup.

"Comfort Food" to me connotes childhood -- so here are a few things that are MY favorite childhood comfort foods

* Campbell's tomato soup and grilled cheese someone else mentioned
* Strawberry shortcake (using a biscuit as the shortcake)
* Vanilla malt
* Homemade oatmeal cookies (recipe used to be on the oatmeal box)
* Bagel and cream cheese
* Jelly doughnuts

Big chunks of chicken, peas and carrots, a little celery, a cube of potato here and there, in a thick base, and surrounded by an even thicker, well toasted crust.

Damn it, I now have a craving for some CPP!

Other homemade breakfast favorite is whole wheat bread French toast with lots of cinnamon, butter and maple syrup
Must be accompanied with good cup of coffee.

For later in day, a great slice of veggie supreme pizza or plate of seafood marinara spaghetti

A good chicken pot pie (even frozen nuked Stouffer's is okay) or roasted chicken with mashed potatoes

Last but not least, sweet potato casserole with pecans and melted butter/brown sugar on top

I had some chili in the freezer that I made a few months ago. Your post reminded me to take it out.

(Mine's a vegetarian chili with 7 different veggies so I made it as healthy as possible. It's vegan unless you slather it with cheese like I do).

Triscuits and Monterey Jack cheese, in the microwave for about 15 seconds. The warm, yummy cheese will be all melty on top. The combination is great.

So Triscuits and Cheez Whiz isn't sad to me at all.

In the summer, any ill can be cured by a tomato sandwich consisting of homemade bread, mayonnaise, several grinds of fresh pepper, & a fresh-picked tomato out of the garden.

I don't make homemade bread, though. A decent whole-grain bread, toasted.

Great summertime meal--tomato sandwich, ear of corn and a cold beer. (Maybe a slice or two of salami or ham, just to get some protein in.)

My preference is Top Ramen Shrimp Flavor. Yup, it's cheap and there's no real shrimp in it.

But one can always kick it up a notch.

Simple recipe:

1 packet Ramen noodles (your choice of flavor)
1 1/2 cups water (less than the prescribed 2 cups)
1 egg, beaten.
Any fresh veggies on hand.
Suggestions:
* Half a jalapeño, finely chopped
* 2 green onions, chopped.

Anything else that trips your trigger.

In a sauce pan, put water per recipe for the number of Ramen packets you are cooking. Add flavor packets and stir in. Bring water to boil. Add, egg, noodles and all veggies. Stir well. Turn burner down to strong simmer. Set timer to 3 minutes. Stir often to mix noodles, veggies, egg.

Serve immediately when timer dings.

Yummy to the tummy.

I love turkey, and I've been known to bake a turkey in the middle of the week so my sons came home from school to a full turkey dinner: turkey, mashed potatoes, stuffing. Maybe sweet potatoes. Always peas.

I also make an amazing chicken stew. With dumplings.

I love meatloaf, but I've never figured out how to make it properly. Darn.

Spaghetti and meatballs. Leftover meatballs for meatball sandwiches.

Baked chicken breast with mashed potatoes.

Pan fried pork chop with dressing. The dressing is made with onion and apple. Yum.

Ham. Love ham. I make scalloped potatoes with ham from the leftovers. That's the best.

I also make a darn good sausage pasta bake: half sweet, half hot bulk Italian sausage. Fry up with a generous amount of onion and green pepper. Rigatoni. Combine those ingredients with a jar of vodka sauce and bake for 30-45 minutes. When serving, grate some nice Parmesan-reggiano cheese on each serving. This is one of the things I make for the homeless shelter in a very large quantity.

Various other soups. Right now I still have some beef barley soup in the freezer. If you're willing to cook in large quantities and freeze individual portions, you can eat quite inexpensively.

I think scalloped potatoes are under-appreciated.

Almost every time I cook, things end up in the freezer. I think it might be because I grew up w/ parents who lived through the Depression. "Use it up.... eat it up!"

especially when I have a carcass leftover from a roasted chicken.

Last week my sister gave me the leftover broth from a corned beef & cabbage dinner. I think I'm going to use it to make some lentil soup.
