(36,827 posts)I'm no expert on kidney beans, but some are a deep red in color while others are more pale. I suspect the ones that are more deep red have a different starch content as they seem to be the choice for when you want a more firm bean like chili con carne, although some consider it sacrilege to include them.
As far as red beans and rice go, the ones that are pale are the ones you want to use. Some people swear by Camellia brand, which is what I use.

(36,317 posts)The original version inicludes pork; I've had it with wheat gluten (not an option for everybody) but other vegetarian and vegan recipes abound. Spicy and savory !

The jellies, ice cream and rice cake are too cloying for me tho

(17,121 posts)I'm soaking some beans overnight and then making traditional baked beans tomorrow, for the first time. Using a recipe from a 1930s Metropolitan Life Insurance recipe pamphlet.
beans, mustard, molasses, and pork. Slow-baked. I hope it is the bean recipe I wanted. If nit, it'll still be good

I grew up on Great Northern beans with cornbread, and my grandmother's green tomato ketchup on the side. In summer we would have cucumbers from the garden in vinegar and sliced tomatoes. Sweet tea, of course.
Really good red beans and rice - food of the gods.

1 can chicken broth
1 can rinsed and drained black beans
1 can Ro-Tel
Simmer with your choice of spices
A few minutes before serving, add a big handful of frozen corn.
Makes 4 generous servings
