When I made some at home and froze it, it came out of the freezer even after defrosting in the fridge drier and with the consistency of fudge and no matter what I did to it, it would not regain the original texture. I added water and reblended but the texture stayed the same and it became particulate (like hummus "peas&quot in liquid.

Ideas?

Just be sure to make an extra big batch of potato salad to go with the fried hummingbird, or your guests will probably go home hungry.

As for whether or not you CAN freeze it, that's something I've never even contemplated but a quick search seems to indicate that it freezes quite well.

Great on whole grain bread lined with lettuce, big slice of tomato, sprinkling of herbs. Must stop. Making myself hungry.

With that, you'll use up a lot.

Another option: have a cocktail hour with a friend and serve some up with vegetables.
