Black ones on pizza; you nailed it. Excellent.
In cooking, I think the green ones add a more earthy taste. Also, for a tapenade, green all the way.
Not that i use olives that often.

I love them on homemade pizza (sliced), and salads (whole or sliced) and in some meals, particularly pastas. They are a quick, full of flavor seasoning too.

My folks (may they RIP) always had us for dinner on Sundays. Mom often put out a dish of pickles and (green) olives. When my son was 3 (he’s now 33) he absolutely demanded a “grape” from the relish dish.
“I wanna grape!”
“Tommy they’re not grapes. You may not like them.”
“I wanna grape!”
I finally gave him one. The look on his face was priceless. To this day he hates olives.

They excel at topping a sausage and cheese pizza, diced up in scrambled eggs and topped with feta cheese, mixed in rice with some black beans and hamburger, and just sitting alongside other food on your dinner plate. Green olives are very versatile and will enhance and enrich your diet. Black olives will work, IF there are no green olives.

Ingredients

Italian Plum Tomatoes (Whole Peeled Tomatoes, Tomato Juice, Basil, Salt, Citric Acid), Portabella Mushrooms, Concentrated Crushed Tomatoes, Black Olives, Olive Oil, Contains 2% or Less of: Chablis Wine, Anchovy Paste (Salt Cured Anchovies, Sea Salt, Water), Artichoke Hearts, Capers (Capers, Water, Vinegar, Salt), Crushed Red Pepper, Garlic, Onions, Parsley, Pecorino Romano Cheese (Pasteurized Sheep's Milk, Rennet, Salt), Sea Salt, Spices.

1. On a pizza - either or both
2. Puttenesca Sauce. I make up mine using good jarred sauce, black olives, extra garlic and some hot chili flakes.
3. I like sliced green ones on deviled eggs
4. Green ones are good in potato salad
5. Cream cheese and green olives with pimento. Spread on crackers. Sometimes I add a bit of shredded cheddar cheese and some spicy peppers
6. Olive and mayonnaise sandwiches.

We have a grocery store which has a large olive/pickle/dip/ section of the store. All the olives are the same price per pound, so you can mix them up. They have these giant green ones that have been dressed up with spicy Italian seasonings - so good!!!!! It's right by the deli, and one of the guys there told us it was the highest grossing section of the store. Which considering the price of their meat is saying a lot. The deli section is conveniently right by one of the entrances so folks can run in and grab a sandwich, or some cheese or items from the olive bar. https://www.centralmarket.com/product-category/deli/olive-bar/1309768.1309773?page=1

they have an entire wall of bulk spices; you measure out what you need in a little bag, weigh it and print a lable and you are good to go. Saves an enormous amount of money and you can keep your spices fresh. There are lots of other bulk things: candy, rice, beans, pasta, granolas, teas, dried fruit, oatmeal, and more. You can even grind peanuts or almonds to make peanut or almond butter.

Also look at produce. You can ask one of the workers (aka 'foodies') to cut up an apple if you want to know what it tastes like and they will happily comply. It is truly a unique shopping experience.
There are only 10 stores, all in Texas. Before the Ft Worth store opened, folks used to take coolers and drive to Austin (3 hours) to shop at their Central Market!

Otoh, I love cold pressed, extra-virgin olive oil! 🧡

🤔 I think there's an extra bitterness in the actual olive.
