What's for lunch?

I'm having a GREAT salad


romaine lettuce
baby spinach
shredded carrots
tomato
cauliflower
black beans
quinioa
golden beets
hard-boiled egg
roasted red onion
sunflower seeds
pepperoncini
shredded parmesean


dressed w/ olive oil and lemon juice

2 Sandwiches:
-shrimp salad cocktail in a small croissant
-Lox with egg salad on top of raisin bread

2 drumsticks and a wing

Sadly, I have to add two cookies, a macadamia nut and a chocolate covered peanut butter cookie.

The easy way....

2 cans of green enchilada sauce (Kroger brand is good)
corn tortillas
Mexican blend of shredded cheese (8 Oz-I use less for calorie reason)
1-2 cups diced cooked chicken (I buy a rotisserie chicken and this is one of the meals I make with the leftovers)
1 small can Hatch green chillies (they sell them frozen too)

Pour some green sauce at the bottom of a casserole dish (4x4 works)
Layer tortillas, chicken, green chilies, sauce, and cheese. Repeat layer. Bake at 350 until cheese melts. Garnish with Sour Cream(I use yogurt).

Variations Red Sauce, black olive (instead if chillies) and beef. Black Bean and cheese and yogurt. Beans veggies and cheese.....etc.

Yah, I can roll the enchiladas, but I am very busy. This is quick wholesome and a great way to eat veggies or hide them from the kids.

Yours sounds good, too, if you'd lose the egg and cheese.

Funyuns and a Zephyrhills water.

I splurged and added pepperoni for 47 cents. Still not sure how an Italian doesn't already come with pepperoni though.


As far as I'm concerned, if I just want an Italian, Wawa is every bit as good as Jersey Mike's and several dollars cheaper.
