My grass-fed meat supplier sent out a cool recipie

Can't wait to try it

Apricot Chops

1 tablespoon olive oil

4 bone-in pork chops

salt and pepper to taste

6 Fresh Apricots, quartered

Juice of 1/2 a Lemon

A Pinch of Sugar

1/3 cup White Wine

1 tbsp Butter


In a large skillet, heat the olive oil over medium heat. Add the pork chops and brown lightly, about three minutes per side. Transfer to a baking dish.

In a small pot, combine the apricots, sugar, and wine and bring to a boil. Reduce heat to low and cook without stirring for 2 minutes, or until the apricots are just slightly softened. Gently stir in the lemon juice and season to taste with salt, lemon, and sugar.

Spoon the apricot mixture over the chops and add the butter to the baking dish. Place in a 350 oven for 10-12 minutes or until the pork is just cooked through. Baste several times during the cooking process.

Looking for a more exotic touch? Try adding a pinch of ground cardamom and a one inch section of vanilla bean to the apricot mixture

and it will taste great. When I stuff a tenderloin or chops, it's a lot like making apple pie + cubed bread but, you could do the same with berries or peaches, even rhubarb.

This is a great recipe, eridani. Precise. I'm going to try it with blackberries.
