What's for Dinner, Sun., April 14, 2024

Won't have time to cook today since my handywoman is here for the afternoon. I'll have the rest of my chicken matzoh ball soup.

I'll make a salad, though, with cherry tomatoes, Persian cuke, and red onion. I found these giant black olives to put in, too. (benefit of cleaning out cabinets) Caesar dressing.

Tart cherry kombucha.

I didn't even have dessert last night, so I'll have the chocolate bar square I'd planned. Fell right asleep. All this gardening is tiring.

I've been under the weather the last week+, so it's my first night back to cooking. I'm going for super easy, lol.

Hamburgers (Boca for me) with all the fixings, lemon-garlic coleslaw, red bean Spanish casserole, ice tea.

7. Lemon Garlic coleslaw

Dressing: 2 tsp finely chopped garlic, 2 T fresh lemon juice, 1/4 tsp salt, 1/2 tsp pepper, 4 T peanut oil (or olive oil if I’m out)
Cabbage, carrots, bell pepper. Can put dressing on vegetables 1-3 hours before serving. Top with fresh parsley if desired. Also good on a fresh spinach salad (do not dress spinach leaves until right before serving).
