What's for Dinner, Mon., May 6, 2024

Pear Watercress/Arugula Salad with Parmesan and Toasted Walnuts.

Half a thinly sliced ham sandwich with chipotle dressing on ciabatta.

Later on I'll have half a slice of strawberry cheesecake and some decaf coffee.

Usually I make this salad with only watercress, but I was browsing around, seeing what others do, and I found that Jamie Oliver mixes his with arugula. The dressing is simply lemon juice and olive oil, but the pears make a bit of liquid that sweetens it up. The white you see in this photo is the pear and parmesan.

Jalaeno chicken, spicy avocado. I have some lettuce washed and drying for later.

Will be enjoying a surprise, instead.

Was making my shopping list today and found a can of cocoa, exactly 1/2 cup left.
So I'll be skipping dinner, and enjoy some Katherine Hepurn brownies and ice cream.
