Ridiculously simple winter comfy snack...

one sweet potato-- peeled, cut up, and sitting in a little hot water until soft. Add some cinnamon, maybe some butter and whatever else you feel like. And maybe some brown sugar, but that could be overkill.

One potato masher working its magic until properly mashed.

Add walnuts, almonds, or any other nuts you have around as the last of the water cooks off.

And some maple syrup stirred in just before serving.

Tiny marshmallows are optional.

replacement sweeteners and syrups permissible to lower carb count if necessary.

Nothing revolutionary or even a little new here, just that it's so quick and easy. And very tasty.

Good. So you aren't boiling the sweet potato?
But you drain the water before adding the cinnamon, etc right?
I love sweet potatoes and usually just bake them in the oven or use the microwave if in a hurry. They're great with just a little butter or heck I like them plain too.

try not to throw the water out. Just let it boil off.

Baked with just butter? Excellent way to eat them.

Try adding them to your chili recipe.

I make a killer veggie chili with sweets, chick peas and TVP...yummy.. but any recipe works...especially if it's spicy!

I love chickpeas as an addition to any kind of soup or stew. Try them in squash soup.

Next time I make this stuff, I'll probably throw some in the pot.

Saute a small onion until golden
Add two or three cloves of garlic, salt and pepper
Add a can of tomatoes (or rotel)
Add a can of chick peas (rinsed)

As it is heating smash the chick peas a bit. You don't want them smooth but more a lumpy, chunky sauce


When starting to boil, turn down to a simmer and gently crack four to six eggs (depending on size pan) on top of the sauce.

When eggs have set, sprinkle top with cheese of your choice

I serve this with a crusty toast but it's also great on small shaped pasta as well

You can go in many directions with the spicing on this. In the summer fresh basil is fabulous. I also like it with cavendars greek spice or go full bore Mexican and use the Rotel

It's also a great way to use up that last little bit of Ham if you have some left. Little bits of ham added to the onion saute add great flavor




I'm sure you also already know about roasting the chick peas. Here's how I do it.

Rinse and dry a can of chick peas
spray with Olive Oil
generously spice with mix of your choice. (Again I love the Cavendars Greek but Chili powder is great too, or even just salt and pepper)
Spread evenly on parchment lined pan and roast at 425 until a little crispy....Careful not to over cook!

When I tried it, I made the bacon brittle the day before like the recipe suggested. Then I tried a little piece of it. Then I ate all the rest of it. Then on thanksgiving I had none for the sweet potatoes.

I do a Layer of mashed sweets and a layer of sauteed apples. I top with Candied Pecans and serve with a slice of goat cheese.

There are rarely leftovers...sigh...

I take the sweet mash and put it individual casseroles, cover with Fluff, and run under the broiler until it's golden and toasty. Sometimes I'll sprinkle it with raw or maple sugar, too.
