I'm thinking Spinach Pizza...
I seem to be on a junk food binge of late, other than fresh fruit, real food is leaving me feeling "eh"

(28,519 posts)My schedule has become insane this week, I'm very grateful he has the time to cook for me. I'm hoping steak and potatoes, but really, I'll be happy walking into the house with any hot meal waiting.

(28,519 posts)He's unemployed at present, so at least the cooking keeps him occupied. Along with the housework - God, I'm getting so spoiled. Too bad I can't afford to support our family alone.

Cooked chicken breast, mayo, celery, curry powder, sliced almonds, dried cranberries, scallions fresh, lemon juice, pepper and a dash of cumin on fresh baked bread (using cheater frozen dough).
For desert 1/2 mini-apple pie and whipped cream.
Beverage: Dark roast coffee.

If I don't find one, I might go for a pasta recipe using turkey meatballs.
I want to thank Pinto for his terrific idea of pairing broccoli with a dollop of curry mayo. I made my curry mayo with curry powder, lemon juice, and a little cayenne. It was so good on my fresh broccoli.
I hit one out of the ballpark with the roasted chicken last night: I put sliced garlic under the skin and also stuffed it with lemons. Then I cut up some dill, grated some lemon, squeezed some lemon juice, and sliced some garlic and warmed it up in olive oil in a skillet. I then basted the roasted chicken with this.
The extra effort resulted in a very flavorful chicken.
Also made glazed carrots.
Chardonnay.
For dessert: mojito sorbet.
Oh man. That meal put me in heaven for awhile.

(6,057 posts)Use a lined rimmed baking sheet covered in aluminum foil. Place a rack on top of that. Fold another sheet of aluminum foil slightly larger than your loaf with holes poked in it for grease drainage. No loaf pan needed.
Pull loaf when about 130F internal and apply glaze. Return to oven to finish.
Crispy glazed outer without soaking in grease in a loaf pan.

(154,021 posts)Yup, I am nuts. Hell, yesterday I sent 15 mini sandwiches with home baked bread to a work pot luck.
Trust me, this is more complex than the bread.

We got some fresh made corn tortillas from my husbands sister to go with. YUM!
