What's for dinner, Thursday, April 23?

Has everyone been fasting the past 2 days or away from DU?

We're having tacos made from grilled chicken, peppers and onions and avocado/grapefruit salad.

I'm also making minestrone for our lunch for the next few days. It's supposed to be cool and rainy.

We're doing cumin-spiced ground turkey w/ chickpeas and onions topped w/ plain greek yogurt, summer squash w/ basil and grape tomatoes, and a salad. If hubby or my son need something more, they can add a serving of cottage cheese or fruit.

I have a dish I made today using the slow cooker. This is my day off, so I had the luxury of shopping for the ingredients and then making the recipe right after getting home.

This is a mild, creamy curry, which I may spice up since I do love the hot stuff. It has coconut cream, chicken broth, chicken breast, onion, turmeric, cumin, ground coriander, ginger, and garlic.

For a side dish, I think I'll slice a cucumber and put it in crema Mexicana.

Dessert is going to be fantastic! Slow-roasted plums! I bought about 15. They are so good with a little dab of creme fraiche over the top.

Also made a pot of Earl Grey today, so it will be nice to have that with the roasted plums.

I have some Trader Joe's pizza dough in the fridge. Time to use it!

Lessee... olives, green and red peppers, onions, sliced tomatoes and (if I still have some in the freezer) artichoke hearts.

today so I am having one of all time favorites, beef and broccoli stir fry with a lot of the crispy water chestnuts over rice.
Frozen banana chocolate chip muffin which I close my eyes and pretend it is ice cream.

SO is finishing the last little bit of pulled pork I took out of the freezer a few days ago. He will grill it on a torta roll with some swiss cheese and finish it off with what is left of the coleslaw I made on Tuesday and top it with a pickle! It's one of his favorite sandwiches.
