Spuds (if there's any left), otherwise rice. Steamed green beans, and the last of the Brussels sprouts I made the other day.

(14,733 posts)I used a bottom round roast (because it was cheap) instead of the recommended eye round roast, didn't salt it long enough (only 6 hours instead of 18, because I forgot to start it the night before) and had to cook it longer than suggested because I like my beef well done, but it came out pretty decently, nonetheless. It's hard to totally destroy a Cook's Illustrated recipe

I popped two smallish Sweet potatoes in the oven. I will chop an apple in the processor with a few pecans then toss in a small frying pan with a pat of butter and a dribble of maple syrup and warm them a bit. When the potatoes are done I will salt them then top with the apples and a few circles of goat cheese.
One of very favorite meals alone.....

(35,765 posts)I arrived home too late to cook, so I had some leftovers that the RG made. They were probably better than anything I would have made, since he's such a food genius.
He puts leftovers in these "seal-a-meal" bags. They stay so fresh that way.
Oh well, I will attempt the chicken tomorrow night.
