Last night I ended up with Bill's amazing eggrolls. I'm still felling crappy, but I couldn't resist them. There is nothing fancy about them, but they are better than any that I have ever had in a restaurant. Maybe it's because they are fresh out of the fryer...?
We have more filling already made, so we may do more eggrolls tonight, or maybe pot stickers. The filling is great in both. Hard to go wrong with fresh ginger, carrot, cabbage, green onion, garlic, a little pork in this case, but I'd love them meatless... and his hand mixed dipping sauce, which I like with honey mustard on the side, is beyond yummy.
We don't really do football (i don't think I've seen a game since my long, looooong ago cheerleading days) so there are no Super Bowl snacks around here today.
What's for dinner, and snacking, where you are?

(32,103 posts)I have an abundance of mushrooms thanks to a fantastic deal at Aldi this week. This is one of my favorite recipes using veggie burgers. I'm actually using "recipe crumbles" which were not in existence when this recipe was created. They work just fine. I'm sure that Gardein's fake beef cubes or Quorn's fake chicken cubes would also work with this recipe.

(32,103 posts)It's called "Recipes for Peace", and has recipes from numerous politicians, religious leaders, celebrities and British Royalty. It was put together to promote peace in Ireland/N. Ireland. I was happy to see that this one was online.

so 4% fat hamburgers on wheat buns with onion, tomato, relish and sharp cheddar Cougar Gold cheese (also a treat)
baked sweet potato fries
green salad
1/2 sugar free/half regular cherry jello with lo fat whipped cream and sliced strawberries for dessert
the good news we're both only 10 pounds from our dream weight in 23 months of steady work. we've both lost a solid 40 pounds, with 10 to go!

(31,170 posts)I use a little bit of white cheddar on my homemade pizzas.
I go really light with the cheese these days, but pizza has got to have cheddar and feta.
Congrats on the weight loss! Thats wonderful. I need to do the same.

(9,850 posts)sweet potatoes whipped with a very little bit of butter, maple syrup, cinnamon, allspice, meyer lemon juice/zest. For the kids, I made those flying spaghetti monsters (hot dogs with spaghetti cooked inside). They LOVED it! The kid who never eats anything, had a blast with these and ate everything. Thanks, Lucinda, for bringing this weird recipe to our attention. The two little ones in my family loved it.

And your meals sounds delicious. I haven't had much of an appetite for the past couple of days, but you guys are making me hungry!

Bill's SIL is supposed to bring her pasta gizmo over one night and play in the kitchen with me, I need to jog her memory!

(163,986 posts)Does anyone have any advice on steaming the noodles? The package just says steam them for 7 minutes and drain v. instructions from the intertubes says steam them for 2-5 min, take them out and stir and then, repeat.
I don't want to wind up with a soggy mess.

Bill cooks lo mein noodles to death, but his sauce saves it. The man can cook Chinese food!

The seasoning was perfect. Could have used more veggies, too. I love the dish. It was a lot easier than I thought it would be.

(12,254 posts)The gathering was planned and catered by the guys. The bought two 3-ft. heros and pizza, plus chips & dip, etc., etc. for three people! Mr. Pup brought home a chunk of the Italian hero to share but I'm sure his brother and guest were bewildered when he left to come home at the beginning of the 4th quarter so he could beat after-the-game traffic.
