Making Cilantro Oil

I found a recipe for cilantro oil on line. Olive oil, cilantro,small amt of lemon juice, maybe a touch of sugar blended. Often when I buy cilantro, the second & third use of the bunch is a few days later means the herb is flippy-floppy, or water logged. How long is a blended olive oil mix safe to keep in a jar in the fridge, would it be like garlic infused olive oil using it within a week?

Get yourself a mason jar. Place the cilantro stems in the jar, and fill partway with water so all stems are submerged. Place a bag (I use the produce bag I buy it in) over the jar, and rubber band it down. It'll keep for at least a couple weeks in the fridge this way.

I do this with parsley as well with good results.

And that only ever happened once.

I don't like wasting, either. It's only a $1/bunch around here, but still...

I will try this @ least once when I'm grilling corn next week or so.
