Tossed green salad with beets, gorgonzola, and toasted walnuts.
Cajun-style stuffed peppers. I have yellow, red, and orange peppers, and they're just beautiful! Chicken in the stuffing.
Dessert: a slice of panettone with a little agave and mascarpone on top, along with hot chocolate.

(22,069 posts)I'm making a three-meatloaf (beef, lamb and pork). I make a sorta pizza sauce to mix with the eggs and bread crumbs for the binder. Mashed potatoes and a green salad with cherry tomatoes and red onion. Wish I had some gorgonzola!
Enjoy your dinner, NJCher!

This made a good amount, so I'm ziplocking the extra for a chicken rub later
