What's for Dinner, Wed., Jan. 10, 2018

Sliced pork sandwiches topped with tuna sauce (this is a Roman thing the RG learned when he lived in Italy).  The sandwiches are on a baguette that we bought this morning at the bakery. There are greens and sauteed zucchini on it, too.

Tossed mesclun salad with mango, blueberries, and gorgonzola. I made this the other day and it was so good I want to make it again.  I'll add chopped cashews to the top, and the dressing will be Marie's Ranch.

I bought chocolate bars for dessert--quite a variety. Some with cherries in them, others toffee or caramel sea salt. 

And spicy apple cider to sip on later.

What is in your tuna sauce, if I may ask?

Tonight here is sloppy joes .... homemade baked beans ..... Mediterranean farro salad .... ice cream sandwiches

9. Recipe for Tuna Sauce

1 can tuna
2 generous tablespoons of mayo
Hot pepper, such as a serrano
lime juice from half of a lime
1 tsp mayo
pinch of salt

Blend using a food processor.

Yum, so good. If you try it and like it, let me know!

OK, sausage and peppiz - but in skillet form: with mushrooms, onions, diced potatoes, and crushed tomatoes. (If I had good rolls, I would have made the classic sandwich, but this'll work.)



ps: Brought back from RI a bunch of good food, mostly charcuterie.

I'm having one of my favorites. Falafel w/ Tahini sauce and a salad. I made the falafel mixture this morning and will fry the patties this evening. I screwed up and first toasted the sesame seeds too long and had to retoast them for the tahini and then made the tahini sauce. Yummmm. Can't wait!

and repairing pipes. Got the toilet sink and tub working with the help of hubs after work and my friend Scott who also helped...came home about 6:00 after nine hours of work to find my dear sister-in-law had made meatloaf, mashed potatoes and zucchini. It was delicious. What a doll! Chocolate pudding for dessert...yum. and coffee.
