I cobbled several recipes together to come up with this and it has been a hit with family and co-workers.
For those of you, like myself, who don't make your own pizza dough, use premade pizza dough that comes in a tube, like canned biscuits.
Preheat oven to 400F. Lightly spray a pizza pan or other baking pan and press dough onto pan, building edges up slightly. Bake for 5-7 minutes or until very lightly browned.
In the meantime prepare your toppings. You can use a variety of meats and vegetables that you have on hand. On my latest pizza, I browned 1/2 lb. breakfast sausage, and a couple of strips of bacon that I cut into small pieces. I mixed this with chopped scallions, sliced mushrooms and diced green pepper that I had in the fridge. About two cups or so of filling makes a substantial pizza. Spread evenly over partially baked crust. Beat 2-3 eggs, season with salt and pepper and drizzle evenly over the pizza filling. Top with a couple of handfuls of shredded cheese of your choice and bake for an additional 15-20 minutes or until egg is cooked and crust is well browned.
This is a great way to use up little dabs of leftover meats and veggies that are hanging out in the fridge. I also think this would make a great camping meal if made in a dutch oven.
