Pie that DOESN'T LIE!




I cannot tell a lie... this pie is delicious! The story about young George Washington cutting down a cherry tree may have been a myth, but this pie is truly a winner. Cherries are baked in a custard-like filling and topped with meringue. You can substitute frozen cherries for the canned, just thaw and drain them well."


ingredients
1 (9-inch size) unbaked pie shell
2 cups canned unsweetened cherries
1/4 cup soft margarine
1 tablespoon flour
1/2 cup sugar
2 egg yolks
1/4 cup evaporated milk
1/2 teaspoon vanilla extract
2 egg whites
2 teaspoons sugar

Preheat the oven to 450 degrees F.

Drain the cherries and place into the unbaked pie shell.

In a mixing bowl, cream together the margarine, flour, and sugar until smooth. Add the egg yolks one at a time, beating well after each addition. Add the evaporated milk and vanilla extract and beat to combine.

Pour the egg mixture over the cherries in the pie shell. Place the pie in the oven and bake for 10 minutes at 450 degrees F.

Reduce the oven temperature to 350 degrees F and bake the pie for 30 minutes longer.

Meanwhile, beat the egg whites until soft peaks form. Add the sugar and beat until thick and stiff.

Carefully pile the meringue on top of the pie, gently spreading it to the edges to seal in the filling.

Bake the meringue topped pie at 350 degrees F for 12-15 more minutes or until the top is just beginning to brown.

Let the pie cool before serving.-"
