Two little beef Angus patties, slow-cooked by the RG, who just returned from Italy. He cooked them with peppers and onion in a skillet. He's making some sort of condiment for them with cilantro.
I'm in charge of the salad and I'm excited about making it from my garden greens.
Dessert will be a chocolate the RG brought me from his hotel room stay.

(58,785 posts)My husband's out fishing, so I'll mix up the dressing and pull out whatever looks good but probably not make it until he finally arrives.
Boil some Chinese wheat noodles for a couple minutes, rinse with cool water, add anything that sounds good to the bowl, toss with a dressing with a soy-rice vinegar-grated ginger base. We still have a little leftover skirt steak, but not enough, so I'll defrost a few shrimp. If I come across something else, it can go on top for decoration. And that's it. One varied dish.

it was marinated in olive oil and a "seafood seasoning" we got in a gift bag for Al's birthday. Then cooked in a grill pan on top of the stove.
Confetti rice (brown rice w/ diced carrots, diced bell pepper, diced onion, corn, minced garlic, parsley and a healthy dollop of butter)
steamed broccoli
store-bought chocolate chip cookie for dessert.

Appetizer:
Ikura sashimi - thick slices of pealed cucumber with the seeds scooped out and replaced by salmon roe topped with fresh dill with slices of lemon on the side.
Entree:
Broiled flounder fillets stuffed with bay scallops and bread crumbs topped with lemon slices.
Side dishes:
Yellow rice flavored with cardamon
Steamed broccoli
Dessert:
Rum raisin ice cream
(Please don't tell the Landlady(!)!)

My market just started carrying a new low carb ice cream called Rebel! I'll get some as a reward for completing the first week. Maybe Coffee Chip.

There was some cooked broccoli left over to round things out.
