What's for Dinner, Sun., Jan. 12, 2020

Grilled salmon with mayonnaise.

The RG read some article in the NY Times this week about "India's Pickle Lady" and he got an idea to do pickled carrots. They turned out kind of hot. Served with beets, which I requested again because they were so good yesterday.

He also made up a plate of canapes which we are having first. He whipped up all kinds of savory toppings with the herbs, cheeses, and vegetables he bought at WF yesterday.

Pears and French cheese for dessert.

Note to NJCher: My grocery store didn’t have any kabocha squash, so I bought a butternut. This vegetable roast is the one you gave me the idea for. I’ve been under the weather the last week or so and didn’t have the ambition to search out a kabocha. I hope the butternut will work. Thanks for the idea! I hope they like it. Will definitely make again if they do!

The original recipe called for butternut. I substituted kabocha because I couldn't find a butternut squash in the size I needed it to be and also because I really like kabocha.

Funny how that works!

Just home from the grocery, and they had an incredible sale on it. So bought enough to stock the freezer.

With that, I think having baked sweet potatoes and cooked cabbage.

I was the only person in the house that was out of bed before 1:00 pm today so I didn't bother w/ breakfast. I made it for dinner.

Apple and banana pancakes. Al had syrup on his, I had raspberry preserves on mine. We also had breakfast sausage.



No need for dessert after such a sweet dinner. Maybe a cup of decaf green tea later.
