? On stuffed peppers

Ok I wanna create or try what my polish grandmother made

I wanna substitute

? 1 -Spanish rice instead of white rice as Spanish rice is huge hit around here as for meat I’m using mixed burger and Italian sausages and tomato sauce

?-2 I found two different recipes one calls for uncooked rice
And other calls for cooked rice what would be the difference

Thank you all in advance from a farm team chef

liquid exactly right for the uncooked rice. It’s like using uncooked lasagne noodles. FoR another twist on this recipe, I use cooked quinoa. It keeps its texture better than rice and is packed full of protein. It’s actually a seed rather than a grain.

With the cooked rice recipe you're just assembling the stuffing ingredients and reheating the rice when you stuff and cook the peppers. Uncooked rice would need to be cooked with the other ingredients before stuffing the peppers. Matter of preference and technique. I'd go with the uncooked rice recipe myself. I had two Polish grandmothers. They made cabbage rolls with uncooked rice.

Learned from grandma and mom.

Cooked and cooled. They were of the thought that warm or hot rice mixed with meat, even if you were going to bake immediately, would be bad for the meat plus the cold starches thicken the sauces. Have to believe it would happen either way but sixty years later I still do it that way either for peppers or golabki. Yes, I started cooking at very young age helping but learning along the way.

Have you ever tried adding chunks of cheese (mild cheddar or jack) to your meat mix?

A great way to make cabbage rolls easier is to microwave a whole head of cabbage for a minute, pull off the softened outer leaves, then microwave again, take off those softened leaves, etc. ( Put cabbage in dish with a little water and cover with saran wrap to microwave)

Not Polish but boy I love both those dishes!

I only made the traditional version once, then remembered soup I' had in a restaurant. BOOM! LOL Soooo much easier to just chop cabbage & toss into pot. 👍

Brown burger &/or sausage with onions & garlic

I usually make fairly large pots of soup - so get 2-3 large cans of crushed & pureed tomatoes & a can or 2 of tomato paste boiling while burger is browning.

Chop up a large head of cabbage & toss into tomato base, add meat & boil till cabbagd is tender.

Some folks add carrots, rice and/ or brown sugar. I don't personally.

If you look up cabbage roll recipe & find one that sounds good, just modify to stovetop & omit the tedious boiling & rolling of cabbage. 😊👍

with left over Spanish Rice. Came out great. Yes cook and cool the rice otherwise. Add a couple beaten eggs to the mix to hold it together. Difficult to mess this dish up. Enjoy.
