With meat possibly becoming more scarce, and more expensive, I have decided I need to be more adventurous with vegetarian main courses. Made a quinoa burger last night and it was truly delicious! My husband (meat-asaurus #1 in our family) loved them and has decided that one of those burgers would be great with a fried egg on top! They are fairly simple, although the recipe uses quite a few pots and pans to make.
Quinoa Burgers
Ingredients:
1 cup uncooked quinoa, well rinsed
2 cups water
4 eggs, whisked
1/3 cup grated Parmesan cheese
1/3 cup finely chopped onions
3-4 cloves minced garlic
1 cup chopped spinach
1 cup bread crumbs
1 tsp. dried Thyme
1 Tbls. Sriracha (optional)
1 tsp. kosher salt
pepper to taste
1 Tbls. olive oil (for frying)
Method:
Cook the quinoa in the water for 15 minutes in a covered medium sauce pan until it's tender and liquid is absorbed. Place the grains in a large bowl and allow to cool. Combine the quinoa with all other ingredients and let the mixture rest so that the moisture is fully incorporated. Form into patties. Heat the olive oil in a large skillet and when it is hot enough to shimmer, add the patties and fry for 8-10 minutes per side until they are brown and crispy. Serve hot. They also freeze well for a future meal. Makes 8 - 1/2 cup patties.

(13,213 posts)While lots of vegetarians are ovo-lacto vegetarians, Parmesan is the major problem: it is required to be made with sheep rennet.
So this is an ovo-lacto-sheep sort of vegetarian recipe.
There are vegan substitutes for eggs and parm. They work ok.

(36,305 posts)They don't mention kidney beans, but those work too. Black beans are best; black-eyed peas give a unique flavor which maybe you have to grow up with to like.
You can vary the recipe quite a bit, but we mostly stick with the basic recipe. Golden flax meal makes a nice substitute for the eggs, giving you a vegan burger.
