1 cup chopped green bell pepper
3 cloves garlic minced
Sautee all of this together in olive oil. I also tossed in a healthy dash of hot sauce and a bit of black pepper but that's to taste.
4 cups chopped cauliflower
2 cups beans (black beans or pintos or even chick peas would work I think)
1 cup chopped tomatoes
1 can of peeled potatoes chopped into chunks
Take all of this, the sauteed stuff and the rest, and stick it in a crock pot with perhaps a cup of water. Let it cook for a few hours, stirring occasionally.
Yesterday was the first time that I made it. I served it with crescent rolls and it was a hit. Yay.
BTW, this is my adaptation of a recipe in "1,000 Vegetarian Recipes" by Carol Gelles. Excellent cookbook. I added the potatoes, added a few more beans, and used the crock pot rather than following her directions exactly.
