OK, slice up 5 white rose potatoes real thin -- like with a food processor. Fry them up in hot hot hot olive oil, remove with a slotted spoon. They fry up a couple of diced onions & 5 cloves of garlic and remove....drain all but 1 T of oil from the pan, beat 8 eggs and throw them in the pan, add potatoes, onions, garlic and turn the heat down. After 10 minutes or so, invert it out on a plate -- then slip it back in the pan to cook the other side.

Cut it into little wedges, eat, drink and be merry. Goes great with that Serrano ham, olives, bread & sangria. Salud!
