20. The iTunes default setting is to sync your iPod when you plug it in
In iTunes, with your iPod plugged into your computer, you can access the settings panel for both iTunes application and your specific iPod. You can have it automatically sync when you plug it in (as you learned), which means if you want to remove something from the iPod, you must either delete the song from your iTunes library or uncheck the box next to the items you don't wish to be copied to the iPod.

Alternatively, you can set your preferences to manually manage your iPod tunes, which means nothing happens when you plug it in, but while viewing your library of music, you can manually click and drag the song icons onto your iPod icon on the left side. Vice versa, you can select your iPod icon on the left, see what's on it, and select and delete songs manually.

My preference is to keep it syncing automatically, and to simply check and uncheck songs in my iTunes library as I feel the need to move or remove them from the iPod. The more songs you have, the easier that method becomes.
