They have the head chef from Tour D'Argent Tokyo (Tour D'Argent in Paris was founded in 1582) going against Chef Chen, who's not ever really used foie gras.

They have duck foie gras from France and Goose foie gras from Hungary.

It was the 300th episode, so they went all out. They probably 30 or 40 livers available on the reveal table, and all the Iron Chefs are watching the show and offering some commentary as well.
