How can I make good eggrolls?
I love eggrolls. I get them everytime I get chinese. It is required for me :). But I would love to be able to make them myself (you know, for those 2 a.m. eggroll munchies we all have). Anyone have good eggroll recipes or tips?

2. Recipe source
Try http://www.recipesource.com

I don't think they're good 2 am fare. They get soft if they aren't eaten right after they're fried. And they're too much work to make at 2 am. I guess you could make the stuffing ahead and then fry them at 2 am, but you'd have to wait for the oil to heat up.

7. Eggrolls are easy.
No recipe required really.

Brown some ground pork. Add some finely chopped cabbage, onions, garlic. We usually add a little oyster sauce too and salt.

Cook it til the veggies are soft. Let it cool a bit.

Put a smallist amount on an eggroll wrapper. Wet the edges of the wrapper so you get a good seal. Roll it up according to package directions (they usually have instructions).

Heat up several cups of corn, peanut or canola oil. Fry til golden brown.

You can make a pretty good hot mustard sauce using just rice wine vinegar and plain old dry mustard powder.

9. Pagoda frozen eggrolls are awesome
(for frozen food). About 20 minutes in the oven at 425 degrees. Not bad.
