2. yes, but it takes some creativity.
And you have to like tapioca and milk.

Whipped Chocolate Tapioca Pudding

3 T Instant Tapioca
3 C skim milk
scant 1/4 c sugar
1 Egg
1 teaspoon vanilla
3 T dutch cocoa or other low sugar chocolate. A 74% dark chocolate works really well if you like dark chocolate.

Follow the instructions for making tapioca on the tapioca container, adding the chocolate when the milk gets warm.

Once the pudding has cooled, pull out the hand mixer and beat well. Refrigerate. It's also VERY tasty warm.

Makes 6 servings. 114 cal per serving, >1 g fat, 2 g. protein.

3. You could make fat-free chocolate pudding and add...
...whipped egg whites. Fold the egg whites into the pudding, which would lighten it up a lot.

7. For an easy one,
make sugar-free Jell-o instant chocolate pudding with skim milk and top it with light Cool Whip. (Don't get the fat free Cool Whip, though. The texture's not so great. Get the "Light.")

If you feel like cooking, here's a chocolate pudding recipe:

1 cup sugar
1/2 cup baking cocoa
1/4 cup all-purpose flour
2 cups water
3/4 cup evaporated skim milk
1 tablespoon vanilla extract

In a saucepan, combine sugar, cocoa, and flour. Add water and milk; stir until smooth. Cook over medium heat, stirring constantly until mixture comes to a boil. Cook until thick, about 1 minute. Remove from heat; stir in vanilla. Cool to room temperature, stirring several times. Pour into a serving bowl or individual dishes. Serve warm or chilled. 6 servings. Each: 194 calories, 1 gram fat, 42 grams sodium, 45 grams carbohydrate, 4 grams protein
