What's Your Possum?

Possum in Mustard Sauce
1 possum, cleaned and cut into serving-size pieces
1-1/4 cups of dry white wine
1/2 cup vegetable oil
2 garlic cloves, crushed
1 medium onion, sliced thin
Salt and pepper for taste
1/2 teaspoon thyme
1/2 teaspoon rosemary
1 tablespoon brown mustard
1 tablespoon cornstarch
1-1/4 cups light cream
Hot cooked rice

Mix wine, oil, garlic and onion to make marinade. Add possum and marinate in frig about 8 hours. Melt butter in deep skillet and brown meat pieces. Pour in marinade and bring to a boil. Stir in salt, pepper, thyme and rosemary. Cover and simmer until tender, about 1-1/4 hours. Mix mustard and cornstarch, then mix cream and pour over meat. Serve with hot rice.
