"authentic" hot chocolate
that was the sign at the cafeteria.

It said

"shaved sweet chocolate
skim milk
cinnamon"

Well, ok then.



(For the record, it kicked BUTT! I just want to sit here and drink it all day long.)

1. cinnamon?
I made some for my daughter when she came home from shovelling snow all day.
2 TB of Droste cocoa powder
1 TB of sugar
1 cup skim milk (lactaid for her)
It's like drinking warm pudding.

2. it couldn't have been much cinnamon
because I couldn't really taste it.

3. Mexican chocolate has cinnamon added....

But it's easier just to add cinnamon (or canela) to your regular recipe.

5. That's a lot if you're talking about for a cup.
Try also a bit of chili powder. A teaspoon full will do about 6 cups.

7. that's *not* authentic hot chocolate... I will however assign points for
it not being of the powdered, homogenized, hydrogenized, sucrose laden, hydrogenated cottonseed oil lactose laced palty imitators.

This my friends is a recipe for genuine, real, authentic, mucho deliciosa hot chocolate....

2 1/2 cups of milk
1 1/4 cups heavy cream
6 oz of good quality chocolate
2 egg yolks
Pinch of salt
Half teaspoon of ground nutmeg
Half teaspoon of ground cinnamon
Pinch of allspice
5 tbsp of water


Put the milk and cream into a bowl over a pan of hot water and bring to the boil, then add the spices and salt.

Simmer very low for one hour.

Just before serving, heat the chocolate and water in a small pan over a low heat until the chocolate has melted. Take the chocolate off the heat and beat in the egg yolks, then quickly whisk in the spiced milk. It will thicken up to a heavenly beverage that will change your life, entirely.

And, if you can manage it, you MUST try the Chocolate Africain at the Cafe Angelina, 226 Rue de Rivoli, across from the Tuilleries in Paris. There... ah, there, you will have a chocolate experience unlike any other in the universe.
