We were in Canon City (2.5 hours south of Denver) for the weekend, and went rafting this morning. I'd never been before (I'm a kayaker, but that's TOTALLY different) and it was fabulous. The water's running high, and while it's cold (55 degrees) it's really not that bad in a splash session. Rent a wetsuit and it's actually nice because the suits are warm and the water feels good. There's whitewater all over the state, of course, so you can go up to Nederland and come down on Boulder Creek if that would be more convenient. Boulder Creek us currently running category 3-4 on rapids, while Canon City has 5s right now.
I'm Miss Sunburn under incandescent bulbs, and I didn't get burned. I used the spray-on sunscreen (Coppertone or neutrogena - got it at Costco in a 2 pack).
We live in Boulder County. For my family, I'd take 'em to Molly Brown's house in Denver and the Science Museum and the Botanical gardens, but those are our interests.
