If you cook turkeys..

Go ahead -- flip the bird

Blogger Heather discovered that a friend was cooking her turkey upside-down. They flipped it over and finished the cooking time. The skin on the breast still had time to turn a lovely golden color, and it was the moistest turkey breast they'd ever tasted. Now Heather makes this "mistake" on purpose, by "flipping the bird" about 30 to 45 minutes before the expected done time.

2. I saw that on TV

Somewhere there is this restaurant that only serves Turkey and that is how they did it. Who would have thunk?

I avoid cooking my own Turkey since the Great Food Poisoning fiasco of 1979.
