I just made a squash-zucchini casserole....Who wants some?
:hi: I just made a yummy casserole from the yellow squash and zucchini (both organic) that I just picked from our garden earlier today. It's got onions, cheddar cheese, sour cream, and a lot of other goodness in it. Who wants some when it's ready?

2. Sounds nice, but I'll pass.
I've already had zucchini twice this week because of the overly ambitious plant I have this year.
I made a frittata with thin slices of zucchini and sauteed onions -- it was very good.

10. Here you go:
Squash-Zucchini Casserole:

2 lb. diced squash/zucchini (whatever proportion you choose)
1 medium onion, diced
Salt to taste
8 oz. sour cream
1 cup milk
4 tbsp flour
1 stick butter or margarine (I use 1/2 cup Smart Balance organic margarine)
2 whole eggs, beaten
1/2 tsp. dry ground mustard
1/2 tsp. black pepper
1/2 cup cracker crumbs
1 cup grated cheddar cheese

Cook squash/zucchini and onions until tender and then drain. Cook milk, sour cream, flour, and butter/margarine into a thick sauce. Beat eggs, dry mustard, and pepper. Mix all this with the cooked vegetables. Stir in 1/2 cup cheddar cheese. Pour into large casserole dish. Top with cracker crumbs and remaining cheddar cheese. Bake at 325 degrees F until golden brown, about 45 minutes.

:rofl: I had some for dinner, and they were whining for some. I gave them a little taste, and they thought it was the greatest thing on earth. I mixed some with their dry dog food tonight, and they ate every drop. :D
