What's for Dinner, DU?
We're having some kind of chicken breast sandwich with sauteed garlic and onion on French bread, I think. Sniffa's in charge this evening. :)

How about you? :hi:

Vine rolls, hummus, and kibbe.

BTW, congrats on your wedding Bibaby! I missed it! I was away on business in Argentina and had very limited web access in the southern hemisphere.

My very very best to you and that impossibly sexy guy you married.

Stuffed with rice, pine nuts, and mint. Sauteed over roast tomatoes and garlic. Would you like the recipe? I also have recipes for kibbe. One of my exes (so many men) was an Arab and his mom gave me many recipes for middle-eastern cooking. i have a treasure of recipes in my kitchen. Just ask my dear........

34. I want the recipe too. I love stuffed grape leaves. Do you know how to make that
lemon sauce they drizzle over it in Greek restaurants?

37. Yes I Do.
Juice of 1 lemon
2 tbsp olive oil
2 cloves of garlic
salt to taste

Combine all ingredients in a mortar and crush with a pestal. If you don't have a mortar and pestal, use a food processor. If you don't have a mortar and pestal or a food processor, I really don't know what to tell you. Crush all ingredients between your ass-cheeks I would guess. Although, it may not taste so good........depending on your toilet hygiene. I really can't say.

But it really is a tasty little vinaigrette!

Try it!

46. Thanks, but how do they get that creamy consistency?
The ones I have had in a Greek restaurant had a creamy lemon sauce over them, which had the appearance and texture of hollandaise sauce but with a pronounced lemony flavor and acidity. Did they just take those ingredients and whip them up somehow?

48. For A Creamy Consistancy
You would have to use a food processor, but add an egg yolk near the end. I really don't like doing that because salmonella is present in raw eggs and I'd just rather not do that. One could always thicken the sauce with corn starch or agar. But why don't you just ask the chef at the restaurant? I have found that most chefs love to share their recipes and are very flattered when customers ask for them. Try it! You might be surprised!

43. I could eat them every night.
Instead of cooking them for hours until they're almost mushy, I get the bag of mixed southern greens from Trader Joe's (in with the bagged lettuce, and already cleaned and cut up for you, which is most of the work). I chop up a slice of bacon and a little onion or scallion, brown the bacon until the fat starts to render, toss in the scallions for a minute until they soften, then in go the greens. They'll shrink in size by about half almost immediately, and as soon as they do, I pour in a healthy splash of white balsamic vinegar (again, Trader Joe's) and some finely ground white pepper, and continue to saute until most of the liquid is absorbed/evaporated. They're perfectly cooked & seasoned, and it takes all of five minutes. You should try it sometime!
