thinking of trying something different w/ my roasted chicken
stuffing a chicken is always good, but lately I've taken to putting a halved lemon and half an orange w/ some rosemary inside of it. It makes for amazing soup stock when all is said & done.

I was thinking of trying a halved lime this time, and maybe some spicy peppers (just a few). I'm thinking this might make great stock to make homemade pho.

Has anyone ever tried roasting a chicken with hot peppers inside of it?

3. You know, I thought of that,
but I have none to spare. There's only about 1 shot in the bottle, and no funds to buy more (I like expensive tequila). I'm saving the shot for an emergency.

4. that sounds good. The one i do a lot is apples, sage and onion.
i quarter the apple and onion and then use about 5 sage leaves, i love sage and it permeates all the meat.

7. herbs, butter, and lemon slices under the skin
Slip a few slices of lemon, some fresh herbs, and a pat of butter under the skin on each side. Then squeeze a lemon over the chicken and salt LIBERALLY. The salt will form a crusty skin that seals in the juices. Roast in a hotter than usual oven. Deeeelicious.

and you'll know it's done when it blows the arse off the chicken! :evilgrin:

Ahem...seriously, olive oil, garlic, lemon, rosemary is the best!

I make a marinade with the oil, garlic, lemon juice, salt & pepper. I gently separate the skin from the breast and pour the marinade under and over the skin then stuff the lemon rinds and a bunch of rosemary inside the bird.

Bon Appetite!!!

13. roasting a chicken really doesn't take any work at all
about 2 minutes of prep, and into the oven it goes.

I don't mind a little work, especially when the return is high. A tasty roasted chicken and kick-ass soup stock later in the week? That's a pretty high return.

16. try this one
take half an onion and half an apple, a cinnamon stick, and 2 cloves. microwave with a cup of water on high for about 3-4 minutes, until its steaming hot.
stuff inside chicken (carefully!). not only does it make it taste good, the hot veggies jump start the cooking, and make your chicken cook faster.

but I haven't tried it.

I recently stuffed basil leaves under the skin of chicken before roasting it and that turned out really well.
