11. One damned recipe, coming up!
:D

PUMPKIN CAKE

1 cup oil
3 eggs, beaten
1 can pumpkin
1 tsp vanilla
2-1/2 cups sugar
2-1/2 cups flour
1 tsp baking soda
1 tsp each nutmeg, allspice, cinnamon, cloves
1/4 tsp salt
chopped nuts (optional)

Cream oil, eggs, pumpkin, and vanilla. Sift the sugar, flour, soda and spices. Add the flour mixture to the pumpkin mixture and mix until just combined.

Pour into a greased and floured Bundt pan and bake at 350 degrees for 1 hour or until toothpick inserted in the center comes out clean. Let cool in pan 5 minutes, then turn out onto plate. Sprinkle with powdered sugar if desired.
