I cooked collard greens for the first time!
Damn they're tasty!

But you gotta cook the bejesus out of 'em!

but that's a good idea.

I boiled 'em for half an hour, then put in a pan with garlic, butter, and olive oil. Simmered 'em for about 20 minutes, then added a little cider vinegar.

the bf is a vegetarian, but next time I make 'em for myself, I'll add a hamhock.

How do you cook 'em with a hamhock? Just boil 'em all together?

9. The way mom taught me is
Cook the hamhock just a little bit and then throw the greens in. That way the juice gets in them. :9

7. It's very similar to yours
except that I stir fry it it before I boil it.

2 tablespoons of oil (approx) heated
stir in your garlic or cumin seeds or what ever seasoning you use, except the salt and vinegar
add the collards (and any other vegetables it if you want)
cook the greens down, until wilted
add about three cups of water, it will depend though so just enough to cover the greens.
cook at medium to medium high heat for 10-12 minutes uncovered and then cover and turn down the heat so it still boils but doesn't overflow for 10-12 minutes. Add the salt (and vinegar, it you like) stir it all up and serve.

also, I always remove the thick stem from the leaves and tear the leaves (or cut) into smaller pieces.

I love collards.
