Veggie stew for dinnah!
YUMMMMM!

Consists of:

2 cans organic diced fire roasted tomatoes
Any veggies I have laying around - this time including:
carrots
celery
zucchini
yellow squash
lots of onion
lots and lots of garlic
fresh mushrooms
asparagus
broccoli
red potatoes
yellow potatoes
anything else I'm forgetting and,
frozen:
peas
white corn
brussel sprouts
whole green beans

Some Vegi-sal (salt with veg granuals for flavor)
Some Braggs no salt seasoning
some "beef style" broth powder.

OMG - I'm in heaven.

4. Umm... do you actually pay attention when YOU cook?
LOL --- no idea. Til the potatoes were cooked through.

I pretty much dumped in the tomatoes first, turned them on to med-low ... then started chopping and adding stuff. Hard stuff that takes a while to cook first - carrots - potatoes -- onions and tons of garlic, then broccoli. Once the carrots were in I turned it up to around medium... just kept adding things while it cooked - by the time I was done I turned it up to med-high, put a lid on, and just let it go .... it cooked for about the length of time it took to read 2 or three good sized DU threads in the final stretch. LOL

It is freaking AWESOME. I made a big pot, and since it's only ME I took a nice tupperware container over to my 76 year old neighbor.

2. Blend in a good Roue, and that sounds like a great
vegetarian gumbo.

Except it needs Okra. But I'm biased. I think almost everything needs Okra. :9

5. Hmm.... that sounds good too :)
I haven't had okra in the LONGEST ... not since my mom's white-bread cracker bourgeois take on "gumbo", I'm sure. I never had a problem with it though. In fact, I believe I even liked it (okra)... so perhaps that makes me weird (I've read the okra threads in here!) ... ? LOL

Their fire-roasted tomatoes are so addictive, they should be a controlled substance.
Tomorrow night is soup pot night here. Maybe I should look for a can of those tomaters in the cupboard...

7. YES!!
They are the bomb-ass diggety, as someone I know would say. :)

I only recently decided to call this "concoction" I make "stew" as it's not really SOUP - I don't add any additional liquid, it's just what's in the tomatoes, and it's not really cooked veggies either. Stew is the best description I can come up with - and I highly recommend trying it sometime on your soup night!
