What's For Dinner?
We're having fried catfish and cajun hot tartar sauce. Half of a baked potato. Pulled barbecue pork. Corn on the cob. Cornbread.

Mmmm. Mmmmm.

Can't wait!

1. Parmesan-crusted chicken cutlets
topped with pesto. Served with a fresh garden salad (I went to the Farmers Market today), garlic green beans, and homemade chocolate mousse for dessert. And it's on my Atkins diet!

It's my 24th wedding anniversary, so we're having prime rib. I don't mean choice grade rib roast, but prime beef rib. Plus baked potato and homegrown green beans. We'll have a nice red wine with that.

15. I just had a yummy feast
at the local Golden Corral. BBQ pork AND chicken, some split sausages (with ketchup, natch,), green beans, little red potato halves in cheesey sauce, potato salad, cold pea salad, some sweet iced tea, and some chocolate chip cookies for dessert.

Oh, yeah, and I have a snack choice this evening of either chunky Belgian chocolate, or buttered popcorn. I feel it will most likely be BOTH. I don't retire until 2:30am... ;-)

18. Zuccini-crust pizza
That's a good way to use up those giant zuccinis from the garden. Grate one of them, squeeze out the liquid, and add a handful of mozerella cheese and an egg, and two tablespoons of flour. Spread out on cookie sheet and bake at 400 degrees for 20 minutes, or until set. Take out and add your favorite pizza sauce and toppings.

Anyone who is on a low-carb diet can eat this and enjoy!

19. vegetarian version of corsican beef stew
2 pkgs each dried porcini and portobella mushrooms
mushroom broth from reconstituted mushrooms
white wine
extra firm tofu in 1" dice
big sprig of rosemary chopped
a big minced onion
lotsa garlic
bay leaves
coriander
balsamic vinegar
1 or 2 drops liquid smoke (substitute for bacon)

saute and simmer, then pour over whole wheat pasta and top with grated romano cheese.

22. Sounds good.
Grilled porterhouse with "California pepper" from Penzey's, Spicy Sesame Linguine with Spanish olive oil and Locatelli, and microwaved zuchini. Did you know zuchini are better microwaved? Really! Honest! Oh, and Jacob's Creek red and a droppa cheap Cognac and some chocolate frafters.

Unfortunately, finished an hour ago.
