Today i am making my first tofu dish for a vegan friend.
I am still hungover from the party at my place yesterday, so far the tofu has been behaving.

I spend a LOT of time in the kitchen :)

4. I've never had any badly behaving tofu - it is generally polite and respectful.
If you need tips, ask. I've used it for over 20 years and I'm quite proficient with it. I've never spanked it and rarely have to raise my voice with it.

6. What kind of dish are you making? That is most of the game.
If it is a stir fry, a marinade usually helps keep it from burning - a simple olive oil, soy sauce (go light), herb, and water to fill mixture works well. It only takes about 15 minutes - after that it won't absorb anything else but it doesn't hurt to leave it in the liquid.

Sometimes it helps to pre-fry the tofu and set it aside and then add it at the last minute. That keeps it from burning.

The key with tofu is to remember that it essentially has no flavor of its own. It is a blank slate. You feed it the flavor you want and train the consistency with the cooking method. It can be soft and pliable or chewy like chicken. You own that decision.

There are also different firmness variants. For stir fry, you want something firm but for lasagna or other mixtures you'll want something light. It is mostly a matter of how much water was squeezed out in the processing.

Tofu is actually a cheese made from soy milk. The process is quite similar to animal milk cheese.

If you have leftover tofu, put it in a quart freezer bag, cover it in water, and refrigerate it. Change the water at least every other day and it will keep a LONG time.

11. I love tofu but I haven't successfully cooked with it yet
One of my favorite appetizers is fried tofu, but my attempt at making it failed miserably. I keep buying more to try again, but my daughter gobbles it up too fast. I also want to attempt tofu spring rolls like the ones Whole Food makes.

What dish are you making?

12. I made a tofu chocolate mousse a while back....
it was..... different. Surely not as good as actual chocolate mousse, but much healthier.

13. Sounds good!
I considered going vegetarian recently but I just can't afford it. So I am going for another "diet" that I have used in the past. I do like tofu though.
