Supper @ Chez trof: Eggs Benedict
We had the traditional ham for Easter yesterday.
Lots of leftover ham.
And asparagus.
Miz t. said "We should have Eggs Benedict for breakfast tomorrow."
I said, "Why not tonight?"
And she said..."Why not? I'll whip up some Hollandaise and pick up some English muffins."
She's a keeper.

And I haven't had it in sooooo long.

A place I used to work a long time ago made the best hollandaise. And they had a mushroom, spinach, onion and swiss omelet that they topped with it. That and some toast with stawberry jam and I was one freakin' happy camper.

Nothing like fresh Hollandaise and Bearnaise.

Beats the shit out of the Norr packaged stuff.
