YAY! I'm cooking for myself till Wednesday!! Southern cooking in Yankeeland!
SO is at a WV casino, so the apartment is MINE.

Tonight: Southern fried chicken, black eyed peas
(imported from Alabama) and stewed taters.

Tomorrow: Beans and ham hocks, collard greens
(imported, obviously) and the obligatory stewed
taters

Tuesday: Haven't decided yet, but certain to make
the neighbors wretch. :evilgrin:

My mother was Southern. She was a gourmet cook but she also made all that stick to your ribs Southern cuisine. Do you use fatback?

But not impossible. So, yeah. When I can.

Thing is, my SO doesn't like Southern cuisine.
When she first saw collards, her reaction was
"you eat that??". My reaction to scrapple. :puke:

none of that fake shit around here

heh, never heard boiled, buttered spuds called "stewed" before, was expecting some other vegs with them or something.

I like some chopped fresh parsley on them (also rewarmed in the frying pan, so you get some crispy browning action!:9 )
