just the dead bird parts. And give it time. The East Bay is another chicken 'n' waffles hotbed, and I'll bet Flaco's vegan taqueria (!) in Berkeley (of course :-) ), which makes a mean faux chicken, would try it!

They're pretty close to the ultimate goal - deep fried deep fry fat on a stick.

One of my favorites for breakfast. Sounds strange, but tastes great. Alas, the bagel needs to be dripping in melted butter, too, real butter.

26. Yeah, it's great
You have to start with fresh honeycomb tripe. I buy it as "menudo panal" at a Mexican grocery store. Barbecuing trpe is similar to barbecuing squid in that there is a small window of time to get it just right. Take it off too soon and it is on the mushy side, leave it on too long and it becomes a bicycle tire.

I marinade it in a little soy sauce, sesame oil and black pepper before it hits the grill. After it comes off I glaze it with a mixture of molasses, habanero and garlic.

I use Thai jasmine rice and kimchi as a side dish.
