I might have to leave the cult . . .
or become an associate member. Today I tasted a few leaves from the Barack Obama Memorial Arugula Patch planted in my garden. YUCK! Just YUCK! The stuff is vile. What do you do with it besides hide it in a tossed salad?

4. Arugula Pesto
Edited on Sun May-18-08 02:19 PM by TahitiNut
Arugula Pesto

1 bunch arugula, stems removed (about 4 ounces)
2 3/4 teaspoons of coarse or Kosher salt
1/3 cup extra virgin olive oil
Freshly ground pepper to taste

Fill a large bowl with ice and add water, set aside. Fill a medium sized saucepan with water and the 2 1/2 teaspoons of salt, and bring it to a boil. Add the arugula and as soon as the water returns to a boil, remove the arugula with a slotted spoon and place it immediately into the ice water to stop the cooking process.

Transfer the arugula to several layers of paper toweling or clean kitchen towels and allow to drain. Roll up the towels and squeeze as much moisture as possible from the arugula.

Place the arugula in a blender jar and add the oil, 1/4 teaspoon of salt and the pepper and puree until the mixture looks like thick pesto. There will be a small amount of oil on the surface. Use immediately or transfer the mixture to a jar with a tight fitting lid if you are going to store it. This will keep for at least 5 days, refrigerated. Before using, stir the pesto to incorporate the oil accumulated at the top.

Serve the pesto over some freshly cooked pasta or boiled potatoes.

in the '80's at Ki's Juice Bar..we had a Food Bar part where I was and I had a bowl of fresh cilantro on the counter so people could help themselves if they wanted to enhance their tacos and burritos.

When I eat it I feel immediately better ..I think because of this..

"Cilantro. Popular in Mexican and Far -Eastern cuisine, cilantro has in a few studies have shown to be an effective chelating or purifying herb. Some researchers believe that it can remove mercury from the brain and body."

I didn't always like cilantro, actually, but I've grown to like it a lot. I used to eat regular parsley medicinally and it had a similar effect on me. It's not so easy to find down here, which is how I got into cilantro.

It's the hottest month of the year. But I am in Zacatecas, which is generally cooler than the rest of the country. Just about perfect right now as we've started getting some rain in the afternoons. I love it here. It's a gorgeous colonial city.

Here is a pic to give you an idea:

The cilantro pesto I had was in Queretaro, though :D

58. I am originally from NYC
Then I lived a few years at the Jersey Shore, but I had to move at one point, and I decided, since I was retired by that time, which was four years ago now, to live someplace different, experience a different culture, and picked Mexico. I sold off my stuff, packed a few suitcases and got on a jet plane. It was the sort of thing where I said, if I don't do it now, when will I ever have such an adventure? I don't have much of a pension and I can live reasonably well here on not much money, too. That's not the only reason. I do love living in this country and the people are terrifically kind and welcoming. If I decide to stay past five years I will apply for dual citizenship. I think I may very well do that.

62. Coming from New York, Spanish isn't exactly foreign to the ear
Still, I don't have a real aptitude for languages and at this age it's more difficult. I didn't speak any when I arrived. By now, I can carry on a conversation to the amusement of my friends and neighbors, and I can read better than that. But that's okay, because nobody here expects people like me to make fools out of themselves speaking broken Spanish and they are thrilled when I do it anyway. :D

64. While I've not reached the point of picking a city yet...
I've been seriously considering retiring in Mexico, too. It will be in the far off future, but I've been practically considering where I'll get the most bang for my retirement buck. I know I won't be able to retire in any of the more popular US areas. That's for sure. I've been looking at purchasing something in Mexico in the near future to retire to later.

If nothing else it gives me an excuse to travel to Mexico, which I enjoy, while I continue to check out places.

How did you choose where you are currently living? If you don't mind my asking?

66. It depends on what you're looking for
As I mentioned, I don't like excessive heat, so someplace like Veracruz or the Pacific coast was out of the question for me. Also, if you're looking to socialize with other gringos, which may be important, you might want someplace like Ajijic or San Miguel. They are both rather expensive places to live in, but nearby towns usually are not. What I did was decide to spend the first two years in Ajijic to see if I could be comfortable living outside the US. I didn't know a soul when I first came. I didn't speak the language so I thought being around English speakers for an introductory period would be good. And it was very good. But then I started to feel sort of isolated in an expat community from the country I was in. The populations, local and foreign, tend to be separated. And my main reason for coming was to live in another culture. Expat communities can become very like the one you left, if you know what I mean. I had traveled several times to Zacatecas and knew I could live here. I felt I could interact more directly with Mexicans if I weren't part of a large foreign population. That has worked out to be true. Zacatecas is also very affordable. It's a small city, not touristic, quiet and safe, but with a miniscule foreign population. It has more of a cultural life than where I had been living, with several good art museums and lots of music and dance. It doesn't attract retirees, because it can be cold some times of the year, is remote as a location, and is hilly. There are larger places, such as Queretaro or Aguascalientes or San Luis Potosi, in this part of the country, where foreigners also live quite happily in smaller numbers and more economically than they would in the main expat colonies. Patzcuaro in Michoacan and surrounding towns is an area I had liked and considered. Then there are other places such as Cuernavaca, which is very expensive, but has smaller towns outside where living is cheaper; perfect weather, too. Mexico offers excellent medical care, so as long as you're near a city, you don't have to be in one, you are okay on that score. You might want to consider the proximity of an international airport if you have friends and family who will visit, someplace like Guadalajara, possibly. My suggestion is to rent in a town for a while before you decide to buy. Be sure it is where you want to be. Mexico is a wonderful country to live in once you know you want to be someplace. I take it you are a Texan, so you already know Mexicans as people, and that won't take much of an adjustment.

You'd really hate arugula rustica! Way more bitter.

Grows wild in Italy.

I grow it here and it's all over the place. It's only good while the weather is cool, though.

We have it with goat's cheese, olive oil, and tomato.
