Healthy chocolate pudding with unusual ingredients
I went to my Healthy Cooking class tonight, and was treated to a wonderful recipe for chocolate pudding that was the best I've ever tasted. But besides taste, it has other pluses going for it: it is vegan, raw (and instant) and low in carbohydrates.

Here it is:

Mash 1 medium (or 2 small) avocados. Blend in 1 tablespoon powdered unsweetened cocoa. Add maple syrup and a pinch of salt to taste.

That's it. Makes enough pudding for two people--a small serving fills you up.

1. Hmmm...
I'm all for putting chocolate with just about anything, but avocados? I might have to give it a try...

The strangest recipe I have is one that puts chocolate in chili - one ounce of semi-sweet or bitter chocolate.

2. Chocolate is often used in Mexican cooking
and not just desserts. Anything with "mole" attached to it has chocolate as an ingredient.

8. I gotta go out more often...
especially to Mexican restaurants.

How did I miss mole all this time? Guess I got hung up (& over) on the margaritas...

3. That's not so strange
Chocolate and Cayenne pepper is the "original" Mayan recipe for chocolate. It's a great combination (especially with a bit of orange flavor on the front end).

Chocolate also goes well with beef (such as in mole sauce), so a chili that had all three would probably be really good.

Hmm...gonna try that. :9

4. My local farmers market
sells a homemade chocolate mousse made with chilis and it's delish. Doesn't taste like chili peppers, but has a bit of zing to it. YUM!

5. I'm gonna try this, BUT...
you do realize that maple syrup is about as high carb as anything you can get? Alas, it's on the forbidden list for most diabetics, although some can get away with a little taste of it.

Me? Maple syrup, like tapioca and a few other forbidden foods, is one of those things I can't do just a little taste of.

6. Yes, I realize that it has the carbs
the instructor is a doctor who specializes in diets and such. She uses only Grade B maple syrup and said that it didn't raise the glycemic index as much as other sugars, but agreed with me that using xylitol or stevia would be better for my particular case. I found that the serving I ate didn't appear to affect my blood sugar enough that I had to take extra chrome.

You could probably make other flavors too with the avacado as a base. I was thinking butterscotch too. But chocolate? Double plus good. :D
