split pea soup....
I needed comfort food tonight, so I made a rich split pea soup:

2 cups dried split green peas
2 celery stalks, chopped
2 carrots, chopped into 1/4 inch dice
1 medium yellow onion, chopped
1 1/2 cups chopped ham
3 inch piece of smoked ham shank
8 cups of chicken stock
1/2 cup chopped parsley
2 bay leaves
salt and lots of freshly ground pepper

Just put everything in a soup pot and simmer, covered, for 2 hours, stirring occasionally to prevent sticking. Remove the cover and simmer gently for another hour to reduce slightly, stirring as needed. Scrape any meat off the ham bones, then discard the bones.

1. OK, it's official
I am jealous.

I love split pea soup, but after my mother killed the cat while fixing split pea soup in a pressure cooker (a long and tragic tale that has left me marked since I was a child), I lost my taste for it.

It's all about the hambone.
