making red beans and rice tonight....
I'm REALLY enjoying being on Christmas/winter break! I have time to plan and cook all my favorite meals.

2. yep, REAL similar-- I don't use carrots in mine...

...and I add andouille sausage and creole seasoning, but otherwise real similar. I use straight small red beans rather than a mix of beans. Simmered in stock for several hours with a smoked ham shank, the ham chunks, sausage, shallots, garlic, and celery, ladled over hot rice. A sprinkle of Tabasco sauce. Yum!

3. i don't mix the beans, I just will use any of the ones i listed
and i add the Tabasco too but at the table, hubby is not a big HOT fan and the carrots are totally optional, i add them cuz hubby likes em

4. I add the hot sauce at the table too....
Otherwise it's not as flavorful. Sometimes I add chilis to the simmering pot-- that's good, but a vinegar based hot sauce seems to lose most of its flavor if it simmers for a long time.

I'm on a major comfort food kick these days. I have the time, while I'm on break, and I'm really enjoying cooking some of my favorite meals. BTW, those beans turned out really well. Isn't it amazing how something so easy can be so satisfying AND flavorful on so many levels?
