Looking for shredded chicken sandwich filling recipe
I had one that was really good and easy. It was made in a crockpot, using canned chicken and crumbs of white, wheat and seedless rye breads. Does anyone have that recipe? Or another tried and true shredded chicken crockpot recipe. I need to take it to a potluck, where it will be sitting out, so it has to be a crockpot or something I can transfer to a crockpot to take.

1. Easy Chicken Con Queso
Cook cubed chicken breast in Pace Picante Sauce (Medium) (just use enough sauce to barely cover the chicken.

I cook this on high for 5-6 hours.

About 30 minutes prior to serving I add a bag or two (depending on how much you are making) of shredded cheddar or Mexican blend cheese.

I serve this with tortillas.

I think I've got that recipe from here and it's in my stack to try.

My situation now is it will be a meeting of Oil Patch Democrats (80% guys) coming in rush hour from work and looking to grab and wolf down something while they're watching a presentation and taking notes. There will be no time for eating, but it will be right after work, 6pm to 10pm. So, I'm thinking a sandwich they can stuff down at their tableless seat. Also, something that can hold for a few hours, so they can slip over to the table during the presentation if they need to.

Your recipe sounds great and I'm glad it's bubbled to the top, because I have another potluck thing the next night (West Houston Dems fun night), that's a social/mingle evening and I hadn't even thought about that one yet. It just so happens I have 2lbs of shredded cheddar in the fridge with a June 30 expiration date, plus I have a couple large jars of Pace.

LOL, I just got home Sunday night from 4 days at the Dem State Convention in Ft.Worth, had a meetup Monday for our congressional candidate, a Progressive Populist Caucus Tuesday night, Democracy for Houston last night and the West Houston Dems meeting Saturday AM, then next week another meetup, the Oil Patch Dems and the Dem fun night. I think I may be too tired to have fun.

Geez, it's 4:50pm and I haven't given any thought to dinner.....looks like take-out.

6. Yes..... It's one of my "go to" dishes when I'm in a jam
It's crockpot, three ingredients, and really good.....

9. I fixed it and want to say again - it was delish
I may have added more shredded cheese or adjusted a measure or two. But I pretty much stuck to the recipe and recommend it.

3. What is this Pace sauce?
I wonder what expats could use in its place - this recipe sounds delish and easy.
Could I use a Salsa instead?

4. Pretty much the samething
The straight Pace Picante is all I knew about for years and then I found Pace Salsa. The only difference I see is the regular picante is dippier and works well with the real thin chips and their salsa is chunkier, so you can scoop it up. Here's a link to the Pace products, so you can see what it is and what brand you might substitute. Some people swear by Pace, but I pick up whatever happens to be on sale and I don't notice the difference. However, I'm not a straight salsa/picante fan. I use it as an ingredient.

5. To me Pace is a little less tangy than regular Salsa
It also does not contain Cilantro which my SO hates. It is saucier than salsa. To me it's more of a combo of Enchilada sauce and Salsa. I personally don't use it as a Salsa substitute but some folks do. It's also not full of artificial crap which is a good thing for mass produced products.

10. The Pace in the recipe isn't chunky
It's quite smooth. You could take a salsa and perhaps whip it in the blender and maybe add more pureed tomatoes than usual. After trying the recipe, I think there's room for interpretation if you have to use what's on hand. We enjoyed it a lot. I'd like to try it with the dark meat of the chicken, too. The flavor and juiciness of the meat might make it a pretty tasty variation.

8. Sounds like chicken quesadillas with a twist
Twist being they can easily be constructed by the guest -- grab a warm flour tortilla (microwave a stack and keep them covered), spoon on the crockpot mixture, roll/wrap and there you have it, easy-to-hold. Sounds perfect for the kind of event you need it for.
